Food was never separate from

family, memory or place.

The work has always been personal.

Rob Gentile is an Italian-Canadian chef, restaurateur and creative director whose work is rooted in seasonality, regional Italian cooking and a deep respect for the people and processes behind food.

Born and raised in Toronto to Italian parents, Rob grew up in a family where food marked the rhythm of daily life. He learned to garden, cook and preserve alongside his family, where recipes were passed down through instinct rather than measurement and the kitchen was always connected to something larger: ancestry, hospitality and belonging.

A career built from the ground up.

Rob began working in Toronto’s restaurant industry at thirteen and entered his first professional kitchen at eighteen.

Over the next three decades, he moved from cook to chef, restaurateur, owner and culinary director, helping build and lead some of Canada’s most recognized Italian restaurants before bringing his work to Los Angeles.

Along the way, his cooking has been shaped by extensive travel throughout Italy, relationships with farmers and producers, and a lasting fascination with the methods that came before modern convenience.

Fermentation. Curing. Preserving. Milling. Butchery. Fire.

Not techniques employed for effect, but ways of understanding an ingredient more fully.

Their attention to detail and commitment to quality truly stood out. We’ve already recommended them to others.
